The South is home of the beaten biscuit which was first mentioned in the 1800's. Country ham sliced thin and beaten biscuits were southern cuisine served at most traditional fancy parties and weddings. These little beaten biscuits were considered the pride of the south and no southern hostess would fail to offer beaten biscuits at all times of the day. The dough had to be beaten hard with a mallet for 30 to 45 minutes. The purpose of the beating was to put air into the mixture. This was before the invention of baking powder.
Father's Beaten Biscuits have been baked in the Bluegrass region of Kentucky for over 50 years. They are delicious served with a traditional holiday meal, a wedding breakfast or reception or as a main item on a party buffet. Father's beaten biscuits can be served cold with Father's fully cooked country ham, hickory smoked turkey or other meats, cheeses or spreads. Beaten biscuits are a cross between a soda cracker and a baking powder biscuit. They are a very heavy firm biscuit and not like our present day baking powder biscuits. Will keep non-refrigerated for 30 days from date received. We do recommend freezing for extended storage.
