We start out with Fathers Hickory Smoked Sugar Cured Aged Country Hams and select special lean slices and dry those slices for several hours. Before drying each slice is hand rubbed with a mixture of brown sugar and a special ground cinnamon. After reaching our desired drying for our country ham jerky we heat at a high temperature to put a candid glaze on the jerky.
