Our 9 month old aged country hams are hickory smoked. Our extra lean center slice steaks are hand trimmed. We remove the rind and excess fat. They are excellent quality. They present beautifully. Less waste and the bone is left in for flavor. The package weight is approximately 12-14 oz.
