We take our traditional hickory cured bacon and generously coat it with a Cajun seasoning. It adds a sizzling robust flavor. It enhances the flavor of the bacon. It's not way to hot, hot. Just a little sizzle. It is excellent as a topping for a salad. We have had just a little trouble keeping it in stock. It is a sell out where ever we take it. It was on back order for weeks after the New York Fancy Food Show. It was the favorite of the show. Also available in 1lb vacuumed package.
