Father's Aged Gourmet Proscuitto is cured and aged the old fashioned way. Hung from the rafters in top of our smokehouse and exposed to extreme heat and shrinkage for a minimum of 10 months. This product has been tested for water activity and passed USDA requirements for Proscuitto. Also available in 2 lb. or 5 lb. unsliced boneless center portion or whole bone-in 13 to 14 lb.
