Father's Aged Gourmet Proscuitto is cured and aged the old fashioned way. Hung from the rafters at top of our smokehouse and exposed to extreme heat and shrinkage for a minimum of 10 months. This product has been tested for water activity and passed USDA requirments for Proscuitto.
